Croatian Wines of the Week – Enosophia Today Blanc and Rosé 2022
Today has your name written all over it
Enosophia (Feravino) – located in Feričanci, Osijek-Baranja County – is one of Croatia’s centuries-old flagship wineries. Its original cellars date to 1804, followed by new construction in 1962 and 2020 – a true “synergy of tradition and modernity.”
After Croatia’s independence from Yugoslavia, Feravino became an independent producer in 1996 – and in 2015, merged with a farming and livestock company named Osilovac. The winery operates under the brand name Enosophia and makes a wide range of white, rosé, red, and sparkling wines from varieties like Graševina, Chardonnay, Riesling, Cabernet Sauvignon, Frankovka, Merlot, Pinot Noir, and Syrah.
Enosophia offers guest tastings at the winery and fine dining at its soon-to-be-open restaurant Goveđa Glava overlooking some of their vineyards. I was fortunate to enjoy both a winery tasting with Danijel Bosak from the winemaking team and a sneak-peek lunch at the restaurant, which was still under construction at the time of my visit in May 2024.
I was particularly smitten with two of Enosophia’s affordable sparkling wines, available in the U.S. from Croatian Premium Wine Imports. Both are made in the Charmat method with short aging on the lees to guard freshness and fruitiness. Drink today (and drink often).

This sparkling’s so bright, you’re gonna need shades
This 100% Graševina sparkling is graceful and light on its feet – a ballerina of a bubbly dancing with notes of zesty citrus and crisp green apple – an ideal apéritif. Serve it with oysters, ceviche, smoked salmon, creamy pasta dishes, and fried foods like schnitzel and chicken.

Frankly, this fizz is fo’ shizzle!
Say dobar dan to the softer side of Frankovka (Blaufränkisch)! This scintillating sparkling Rosé is so ‘berry’ juicy – dazzling with ripe strawberry, wild raspberry, and tangy redcurrant flavors. Pair this uncommon bubbly with salmon and tuna sashimi, charcuterie, soft cheeses, rich custards, and berry tarts.
